Variants can be mixed to get the 5+ discount, however that occasionally doesn't come through during the checkout process.  In such cases, proceed with the order and an appropriate refund will be made when the order is processed. 

Alternatively, (as we needed to do with the Snowplough sale earlier in the year) select 5 of a single variant and place a note in the Sundry Info box of the actual liveries you want.
